It is better to cook them with fermented milk products - kefir, sour milk or sour cream. If you like moist muffins, then add soft cheese to the filling and cut it into pieces - this will add juiciness to the baked goods. With grated cheese, the muffins will be soft and tender, but the dough will be a little denser and more homogeneous.

Ingredients

  • ham – 100 gr
  • cheese – 50 gr
  • flour – 220 gr
  • low-fat kefir - 1 glass
  • egg – 1 pc.
  • salt - 1 tsp. (taste)
  • sugar – 1 tsp. (taste)
  • baking powder - 2 tsp.
  • butter (margarine) – 50 g
  • basil, thyme, thyme - to taste (optional)

Preparation

Beat the egg with a fork and pour into warm kefir (room temperature).

    Add melted butter there.

Sift the flour and pour into the kefir mixture. Don't forget to add baking powder (it can be mixed with flour).

Stir the dough. While it has not yet become homogeneous and dense, add spices and spices to it to your taste. Knead the dough until all ingredients are combined.

Grate the cheese or cut into pieces.

Cut the ham into very small cubes. If you cut it coarsely, it will be difficult for the dough to rise and the muffins will turn out dense.

Mix cheese and ham into dough.

The dough will be denser than for sweet muffins; it will fall from the spoon in a lump rather than pour out.

Fill the molds no more than 2/3. The muffins will rise in the oven. Since the dough is dense and not entirely homogeneous, press it a little to better distribute it throughout the mold.

The top can be brushed with beaten egg and sprinkled with sesame seeds.

Muffins are baked in a well-heated oven at a temperature of 180-190 degrees. In 20-25 minutes they will be ready. To prevent the muffins from getting soggy, immediately remove them from the pans and cool on a wire rack.

According to the proposed recipes, it becomes clear that many ingredients can be safely replaced - instead of sausage, cut sausages or smoked meat, or a mixture of sausages, or even use minced meat. Fluffy muffins with ham and cheese can be an excellent replacement for hot sandwiches; the kefir recipe is easy to prepare, and their salty taste goes well with both first and second courses. They perfectly diversify the usual tea table and serve as a wonderful snack.

How to make ham and cheese muffins

Pour kefir into a deep container, preferably warm. Add soda to it and stir. When extinguished, soda will increase the volume of liquid due to the release of carbon dioxide bubbles.

Add egg, butter, salt and sugar, aromatic herbs to kefir and mix.

If you took butter, first melt it and cool. Cupcakes bake with butter a little faster.

If desired, you can add aromatic herbs and even a little garlic to the muffins. Take any seasoning or a fragrant mixture of them. It's fun to experiment with - each time you make it with a different type of weed, you'll end up with slightly different cupcakes.

Add sifted flour and knead the dough. Its consistency should be stiffer than that of sweet muffin dough.

Cut the ham and cheese into small cubes.

If you cut the ham into large pieces, they will not allow the dough to rise well and instead of fluffy muffins you will get cheese and ham pancakes.

The cheese can be grated. Then the muffins will be softer and more tender, but the dough will be denser and more homogeneous.

Mix all the products thoroughly and pour the resulting mixture into the molds, filling them about 2/3 full. You can sprinkle the top of the muffins with grated cheese, sesame seeds or sunflower seeds.

Place the semi-finished muffins in an oven preheated to maximum temperature. For the first 10 minutes, maintain the degrees at the maximum level. The dough in the molds should rise.

Reduce heat to 180 degrees and bake for about 20-30 minutes. Cooking time depends on what kind of oil you added to the dough and on the features of your oven. The sign of readiness will be the browned surface of the cupcakes.

Remove them from the oven as soon as they are ready; leaving the muffins inside may cause them to become soggy.

Set the table, invite the family - it's time to try muffins with ham and cheese, the recipe with photos is ready step by step! Bon appetit!
